Potato and leek soup is such a nice soup that I’m delighted I can make it here at home any time, and with such a simple recipe, so can you!

SERVES 1
Ingredients:
- 1/4 onion
- 1 bay leaf
- 250 ml vegetable stock
- 175 g potatoes
- 1/4 leek
Method:
- Chop onions and cook for 5 minutes with the bay leaf and 40 ml of the vegetable stock until the onions go clear.
- Dice the potatoes and trim the leek. Add these and the remainder of the stock. Cover and simmer for 25 minutes.
- Allow to cool and remove the bay leaf before blending until smooth.
