Potato and Leek Soup

Potato and leek soup is such a nice soup that I’m delighted I can make it here at home any time, and with such a simple recipe, so can you!

SERVES 1

Ingredients:

  • 1/4 onion
  • 1 bay leaf
  • 250 ml vegetable stock
  • 175 g potatoes
  • 1/4 leek

Method:

  1. Chop onions and cook for 5 minutes with the bay leaf and 40 ml of the vegetable stock until the onions go clear.
  2. Dice the potatoes and trim the leek. Add these and the remainder of the stock. Cover and simmer for 25 minutes.
  3. Allow to cool and remove the bay leaf before blending until smooth.
